First, it's important to understand where Related Lists are used and who has visibility of the data within a Related List. Watch this 3-minute video to learn more. Follow along with the video or the click-path article below.
Navigate to the Account page to see the first example of Related Lists in Lightning. You will default on the Details page, click on Related and scroll down to see the records related to this Account and their Related Lists.
Note that the Related Lists can only display four (4) Fields at a time.
1: Change Fields visible in Account or Contact Related Lists
Click the gear icon in the upper right corner of the screen
Navigate to the Setup menu
Click on the Object Manager
Choose the appropriate Object (in this example, we're changing the Related Lists on the Account page).
Next choose Page Layouts
First, check the Layout Assignment to see which Profiles are assigned each Page Layout. Be sure to add the fields to all Page Layouts (as appropriate for the Profile).
Select the Page Layout you need to edit.
Choose Related Lists and scroll down to see the Related Lists on the Account page.
In this example, we will add fields to the Projects Related List visible on the Account page.
Click the wrench icon on each Related List to change the Fields which are visible, or the order of the Fields.
System Best Practice: Remember to leave the record Name in each related list for ease of navigation (being able to click on the Name and go to the record).
Note that only the first four (4) fields will be visible on the page due to limitations of screen real estate.
Use the Add and Remove arrows to select Fields and move them into the Selected Fields section. Use the Up and Down arrows to change the order the fields are displayed on the page.
Once you're finished making your changes, click Save on the Page Layout.
Next, navigate to an Account record to see these changes take effect.
Note: The Record Name is a click-able link. For this reason, it is a system best practice to always keep the record Name as the first field in each Related List. Meaning you can display three additional fields in each list.
2: Change the fields visible on Related object record cards
In this example, we have a custom field we've created on the Project object and we would like this new field to be visible from the Sale page related list.
Navigate to Setup
Click on the Object Manager
Choose the appropriate Object (in this example, we're changing the fields visible on the Sale page).
Next choose Page Layouts
First, check the Layout Assignment to see which Profiles are assigned each Page Layout. Be sure to add the fields to all Page Layouts (as appropriate to their Profile).
Click on Related Lists
Note that only the first four (4) fields will be visible on the Sale page due to limitations of screen real estate. However, users can select "View All" to see all the fields you've added to this Related List. See below for additional details.
Use the Add and Remove arrows to select Fields and move them into the Selected Fields section. Use the Up and Down arrows to change the order the fields are displayed on the page.
When finished, click OK.
Save the changes to your Page Layout.
Then, navigate to a Sale record which has at least one Project, to see these field changes:

NOTE: If User selects View All from the Related List, they will be able to see all the Fields you've added to the Related List.
From this view, Users can see all fields included on the Related List:
